Mint Ice Cream

One of Mary's favorites especially with Andes mints.

Mint Ice Cream


  • Eggs: 2 large
  • Sugar: 3/4 cup
  • Heavy cream: 2 cups
  • Peppermint extract: 2 teaspoons


  1. Whisk the eggs in a mixing bowl until light and fluffy, 1 to 2 minutes. Whisk in the sugar, a little time, then continue whisking until completely blended, about one minute more. Pour in the cream and mint and whisk to blend.
  2. Transfer the mixture to the ice cream maker and freeze following the manufactures instructions.
