Mint Ice Cream
One of Mary's favorites especially with Andes mints.

- Serves: 1 quart
- Difficulty: Easy-Peasy
- Eggs: 2 large
- Sugar: 3/4 cup
- Heavy cream: 2 cups
- Peppermint extract: 2 teaspoons
- Whisk the eggs in a mixing bowl until light and fluffy, 1 to 2 minutes. Whisk in the sugar, a little time, then continue whisking until completely blended, about one minute more. Pour in the cream and mint and whisk to blend.
- Transfer the mixture to the ice cream maker and freeze following the manufactures instructions.
